I know it's a rhetorical question. Do you think by rejecting his entire sunnah it's still possible to follow our role model and get a deeper understanding of his life and character?

That is not a small thing. You are talking about God's message to mankind. And God is not going to give this burden and responsibility to anyone unless he is a role model for mankind. You probably have a better chance getting struck by lightning twice than being chosen by God to be His messenger.
The issue here is how many revelations came to Muhammad. The Koran does not tell us about any revelation that came to Muhamamd except the Koran. Plus the Koran itself gives many insights not only about Muhammad's example and legacy but also many other prophets also. It does so to give us gives us ane xample of the charcter and faith of the prophets and how they had to struggle to carry the burden and responsibility of God's message. It is certainly not a job God gives to anyone.
Certainly, there is an excellent example for you in the Messenger of Allah, for him who looks forward to Allah and the Last Day, and remembers Allah much. Al-Qur’an, 033.021 (Al-Ahzab)
Certainly, there is an excellent example for you in Abraham, and his companions. They said to their folk, “Verily, we stay clear of you and of what you worship instead of Allah. We denounce you and between us and you has arisen distance and aversion until you believe in Allah alone.” The only exception was Abraham’s saying to his father, “I will indeed pray for your forgiveness, although I have no power to achieve anything from Allah on your behalf.” Then he prayed, “Our Lord! In You we place our trust, unto You we turn, and unto You is the Final Destination. Al-Qur’an, 060.004 (Al-Mumtahina)
And at the end of the chapter of Joseph the Koran tells us:
12.109-111 Nor did We send before thee (as apostles) any but men, whom we did inspire,- (men) living in human habitations. Do they not travel through the earth, and see what was the end of those before them? But the home of the hereafter is best, for those who do right. Will ye not then understand? Respite will be granted) until, when the apostles give up hope (of their people) and (come to) think that they were treated as liars, there reaches them Our help, and those whom We will are delivered into safety. But never will be warded off our punishment from those who are in sin. There is, in their stories, instruction for men endued with understanding. It is not a tale invented, but a confirmation of what went before it,- a detailed exposition of all things, and a guide and a mercy to any such as believe.

The train of thought : excellent pattern should be found from hadiths
60:04 There has already been for you an excellent pattern in Abraham and those with him, when they said to their people, "Indeed, we are disassociated from you and from whatever you worship other than Allah . We have denied you, and there has appeared between us and you animosity and hatred forever until you believe in Allah alone" except for the saying of Abraham to his father, "I will surely ask forgiveness for you, but I have not [power to do] for you anything against Allah . Our Lord, upon You we have relied, and to You we have returned, and to You is the destination.
60:05 Our Lord, make us not [objects of] torment for the disbelievers and forgive us, our Lord. Indeed, it is You who is the Exalted in Might, the Wise."
60:06 There has certainly been for you in them an excellent pattern for anyone whose hope is in Allah and the Last Day. And whoever turns away - then indeed, Allah is the Free of need, the Praiseworthy.
So, we see in context of the entire Qur'an that use of the phrase "excellent pattern" for a person does not justify the necessity of external man made sources for Islam. We surely do not seek 6 Saheeh collection of hadiths of Abraham and his mates to tell us their views and opinions. God alone was sufficient for Abraham and his mates, Muhammad and his mates, for me too.
Just want to share one of the most exciting "excellent pattern" I found from Qur'an about prophet:
66:1 O you prophet, why do you make unlawful what God has made lawful for you, seeking to please your wives? God is Forgiver, Merciful.
Not even the messenger was allowed to play the role of God. This ayaat helps demonstrating and drawing a clear line between God and his messenger. Which ofcourse traditional Islam is allergic to, thus breaking the principle of "No god besides Allah".
